Boselli Parmiggiano Reggiano

We wanted to combine our name with our Parmigiano Reggiano, because we know everything about this Cheese.

It was born in our fields, where we grow fodder to feed our animals and the process continues in our stable, where we milk over 180 cows respecting their welfare after having fed them with self-produced fodder. 

We produce about 10 Parmigiano Reggiano “wheels” every day, thanks to the 50 quintals of milk milked every day in our dairies in Fontanellato and San Ruffino. 

From Boselli family, farmers for four generations, comes Parmigiano Reggiano Boselli. It is made pursuing the idea of a short supply chain for a product that naturally combines tradition, knowledge, and love for nature: in few words, from the field to the table. 

We decided to include Sanvitale Fortress image in our logo and on the packaging because we have a very strong bond with our Territory.

OurProduction

Our production is deliberately limited to use exclusively our own milk and maintain a high level of excellence.

Our Parmigiano Reggiano assortment is wide and divided into different sizes and seasoning.
The product that comes from our dairies is available with two different brands according to the different aging. After 30 months the product is offered under the Boselli – Riserva San Ruffino brand, while the Boselli brand is dedicated to the product aged 12 to 29 months.

Parmigiano Reggiano aged 12-18 months has a harmonious and delicate flavour with hints of milk, yogurt, and fresh fruit. Particularly suitable for an aperitif paired with sparkling white wines or to enrich salads and cold plates. (Slow shop)

seasoning 24 months

22–24-month Parmigiano Reggiano is crumbly and grainy with just the right balance of sweet and tasty. With notes of fresh fruit, dried fruit, and beef broth, it is perfect with medium-bodied wines and to give flavour to all traditional Italian dishes. (Slow shop)

Riserva San Ruffino

seasoning 36 months

30–36-month Parmigiano Reggiano is particularly crumbly and grainy with a strong flavour and notes of spices, dried fruit, and beef broth.   It is an ideal ingredient for stuffed and baked pasta or to be consumed at the end of a meal with fruit and honey.

Parmigiano Reggiano over 46 months has reached a maturation that exalts the aromas. It has very intense flavour characteristics, never spicy, with a strong taste in which notes of dried fruit and spices stand out. To be tasted with balsamic vinegar, fruit jams and structured or meditation wines
