Once the Duchy of Parma (one of the most powerful in Italian History) dominated these lands, now this territory combines unique natural landscapes with exceptionally beautiful villages and towns boosting the work of painters, architects, artisans, musicians and designers; along the centuries they improved the efficiency of agriculture and industry while taking care of the territory, and building magnificent residences, castles to enjoy a culture full life.
The Boselli Family knows too well that their success is deeply rooted in their territory, that is why they proudly present branded experiences to introduce you to the Italian Region of Parmigiano Reggiano DOP.
It was in this area that at the beginning of the fourteen century the monks, that were committed to finding a cheese that could last long, used salt from the mines to preserve the dry paste cheese obtained from their cows’ milk and preserved in large wheels suitable for long preservation. Since then, Parmigiano Reggiano has been produced and has become the main ingredient in so many unique recipes so common on Italian and now international tables.

Saturday: in the morning enjoy a full day food experience.
Start with visiting the Boselli Farm to learn all about Parmigiano Reggiano secrets. Finish the morning with different ageing cheeses tasting and learn about how to best accompany them with wine.
Enjoy your lunch with typical specialties and local wines.
In the afternoon an introduction to the local cuisine and enjoy a cooking class, a full Italian meal that is always composed by starter, primo, secondo and dessert.
The starter is a giardiniera; then you learn how to prepare gnocchi or tortelli with Parmigiano Reggiano, then a classic dish from this territory the Duchessa di Parma.
Finally learn how to make desserts either la panna cotta or chocolate cake.

Sunday: meet our guide for a full day between castles and delicious food. This is a perfect day to discover the strong link between food, power and innovation. Lear about the families that inhabited this hilly region.
Start from the Rocca Sanvitale in Fontanellato, get a glimpse of the aristocratic life in the past centuries and the importance of agriculture and land for the wealth of this area. Follow to enter Soragna and visit the Rocca Meli Lupi, the only castle in the area where it is possible to visit the throne room.
Lunch at a restaurant with typical products and enjoy a balsamic vinegar tasting, to learn about this dark, concentrated and flavored product that comes from wine.
In the afternoon continue to Torre Chiara, a romantic castle that wanted to express his love for his wife in all the aspects of their mansion. The frescoed rooms are among the best preserved in Italy.
Return to Hotel to pick up the luggage.

Friday: arrive in Parma, home of the Parmigiano Reggiano PDO and the Prosciutto Crudo di Parma PDO
Welcome dinner with tasting of local Parmigiano Reggiano, Prosciutto Crudo di Parma and other delights.

Enjoy a walking tour in Parma, starting from Palazzo della Pilotta, to learn about the Farnese Family. Follow to visit the Duomo, where you will see paintings of Coreggio and Benedetto Antelami to understand how important was this area during renaissance. Visit the Regio Theatre and enter the Piazza Garibaldi.
Enjoy lunch in in the hills where wine is still produced and you can enjoy relaxing views.
After lunch visit a place where they produce Parma Ham, learn the different characteristics and taste different ageings.
Return to Hotel to pick up the luggage.

Monday: meet the king of cheeses Parmigiano Reggiano, learn about all its secrets in the Boselli farm. Learn how important is the quality of all the process starting from the relevance of the forage, the wellbeing of the cows and the ability of the cheese makers. Finish with a cheese tasting experience to educate the palate at different ageings of cheese.
Enjoy lunch with typical products at an Acetaia, where the famous Balsamic Vinagre is made.

Wednesday: dedicated to Wine. Our route starts from Parma and touches some small towns as Ozzano Taro and Sala Baganza. Enjoy the unique landscape with its colors and smoothness. Variety is the characteristic of this area, so it is possible to taste six different qualities of wine. Visit 3 different wine cellars to understand the difference between the frizzy wines like Malvasia, Colli di Parma Rosso, Lambrusco and Moscato. Then learn about the still wines from the typical grapes of this area such us the cabernet, merlot or pinot noir. All are produced by small wine makers and only local grapes.
Lunch will also be accompanied by wine.

Thursday: Culatello di Zibello and music. Learing how to preserve food has been an obsession for most of the medieval period, in this wheatly area they also learned how to preserve meat. It was also in this area that in 1332, during an aristocratic wedding feast it was offered some Culatello, curated pork meet and since then it has been produces by local farmers.
The day will be dedicated to Cremona, the capital of Music and Violin Makers, famous also because it is the city where another Italian Speciality was borne the Torrone was born. Enjoy the visit of Renaissance churches and observe how important food is for the artistic symbology of the Christian religion. The alluring historic centre spreads out of the square into the central Piazza, that is surrounded by the Municipality a XIII century Building.
Enjoy a light lunch where in Cremona to taste all different curated meets produced in the area and delicious wine.
In the afternoon enjoy a short visit to famous violin makers to see how wood becomes a perfect musical instrument. Violinists from all over the world meet here to learn
Live Cremona and on the way back to Parma stop at the Culatello di Zibello production site to learn about all the secrets of this unique curated meat.
Return to Parma to enjoy an Aperitivo

Friday: Bologna is the kingdom of “pasta Fresca”, pasta made with flavor and eggs that becomes: tagliatelle, tortellini, agnolotti, a pappardelle, farfalle, quadrucci, lasagne, tagliolini and tagliatelle. In bologna there are the tortellini, small pieces of ring-shaped pasta stuffed with cheese and meat. It is a rich tradition that shows the wealth of Bologna in the past. Visit the city starting from Piazza Maggiore, the very center and admire the elegant palaces surroundings the square. Enter the church of San Petronio, that has the portal of Jacopo della Quercia. Bologna bosts one of the oldest universities of the world, visit the Teatro Anatomico, once used for anatomic leetures
Stop for lunch to enjoy either a Bolognese Ragu or Tortellini.
Continue the walk toward the medieval market to see the old structure where it is still possible to by fruit and vegetables, bred, pasta and obviously Parmigiano Reggiano .
Finish the day at Due Torri, the ancient symbol of Bologna two unbelievable medieval buildings enjoy an aperitive from the top of the tower.

Saturday: dedicated to motor valley. Agricultural innovation was a driving force for food production as well as the need of innovation in the machinery to improve the return of the land. NO wonder it is in this area that from the study of tractors engines Lamborghini, Ferrari, Ducati and Zonda were born. This is a full day dedicate to the innovation of the motor valley. Enjoy a visit to the Ferrari and Ducati Factory.
